Hutsul Varya is a dish native to Bukovyna. Its main ingredient is boiled beets. This salad is usually prepared during Lent, because it does not contain meat and other animal products. At the same time the dish turns out very hearty and tasty.

Ingredients

  • 3 small beets;
  • white beans — 300 grams;
  • prunes — 300 grams;
  • sauerkraut — 150 grams;
  • 1 onion;
  • oil, salt, pepper — to taste.

The cooking process

  1. To begin, prepare the beans. Soak dry white beans in water for 6-8 hours. Then boil until cooked and cool.
  2. Bake the beets in the oven or boil. Peel a squash, grate it and cut it into cubes.
  3. Wash the prunes and pour hot water for 20 minutes to make them soft. Then cut the dried fruit into strips.
  4. Cut the onion into half rings.
  5. Mix all ingredients in a bowl, salt, pepper and season with fragrant oil.
