Yokai bob—levesh is a fragrant rich soup, traditional for the diet of the Western Ukraine inhabitants. In the classic version, this dish is served in a bread plate.

The dish is named after the Hungarian writer and politician of the XIX century Mora Yokai. Over the decades, the recipe has changed, every housewife has her own secrets of cooking this soup. Several ingredients remain unchanged: paprika, smoked meat, sour cream and beans.


  • fresh beans — 200 grams;
  • smoked pork leg and piknicya — 500 grams;
  • 1—2 carrots;
  • 1 green bell pepper;
  • 1 tomato;
  • 1 onion;
  • sour cream — 150 grams;
  • flour — 60 grams;
  • bay leaf, parsley, garlic, paprika, celery — to taste.

For dumplings (csipetke):

  • flour — 100 grams;
  • 1 egg;
  • a pinch of salt.

The cooking process

  1. Cooking bob—levesh begins with the preparatory stage. Boil pork leg until cooked, strain the broth. Fry piknicya in a pan.
  2. Prepare csipetke. Mix all ingredients. Form a ball out of the dough, wrap it in plastic wrap and refrigerate for an hour. Then form long thin sausages from the dough. Pinch off 2—3 cm long pieces from them. Sprinkle with flour.
  3. Cut vegetables into small pieces. Cut the piknicya and disassemble the pork leg.
  4. Fry carrots and celery in the lard left after frying piknicya. Add green bell pepper, after a few minutes throw in beans, tomatoes, garlic, bay leaf.
  5. Transfer the vegetables to a saucepan and pour over the pork leg broth.
  6. When the broth boils, add the meat and dumplings.
  7. Fry the onions in a separate pan. When it turns golden, add paprika and a few tablespoons of broth. Add this roast to the soup.When the beans are ready, add the remaining spices. Salt is not used in the dish, because smoked meat itself is quite salty.
  8. In a separate bowl, mix the flour, sour cream and a few tablespoons of the broth. Add this mixture to the soup. Boil the soup for a few more minutes and add piknicya and greens.
  9. Serve bob—levesh with sour cream and fresh bread.
