Cabbage soup, or kapusnyak is a traditional dish of Ukrainian cuisine, made of sauerkraut. Cabbage ingredients can vary by region. It can be vegetarian, or with meat, fish or mushrooms. But in any case, the dish has a special sour taste, typical of sauerkraut.

The components of cabbage soup also vary depending on the season. During Lent or Fast, the dish was prepared without meat, with the addition of vegetable oil. In winter and on holidays, the broth for cabbage soup is made of fatty parts of pork. In the early twentieth century, when tomatoes began to be actively cultivated, they were also added to the dish.

Ingredients

For traditional cabbage soup you will need:

  • sauerkraut — 500 grams;
  • 1 onion;
  • 1 carrot;
  • mushrooms (white button or champignon) — 200 grams;
  • 3 potatoes;
  • lard — 50 grams;
  • Piknicia (homemade pork and beef sausage) — 100 grams;
  • vegetable oil — 2 tablespoons;
  • allspice — 3 peas;
  • bay leaf — 2 leaves;
  • garlic — 1 clove;
  • salt, pepper, dried aromatic herbs — to taste.

The cooking process

  1. Cabbage soup cooking begins with roasting. Heat a frying pan and place the lard on it cutted into small pieces. Let the lard melt. It only takes 2—3 minutes on low heat. Add finely chopped onions and carrots to the pan. Fry until the onion is translucent. Then place piknicia on a frying pan and cook over medium heat for a few more minutes.
  2. Now peel the mushrooms and cut them into medium pieces. Add them to the pan with the rest of the ingredients and simmer for 3—4 minutes. The last ingredient to roast is sauerkraut. Stew it for 4—5 minutes, add spicy herbs at the end.
  3. Take a deep saucepan and pour about 2 liters of water into it. Put diced potatoes, bay leaf and allspice in a saucepan. When the potatoes are half done, add the roasted vegetables to the pan and cook for another 5 minutes. At the end of cooking, add salt and pepper to taste. Remove the pan from the heat and let the dish infuse for 15—20 minutes.
  4. Serve the soup with cream or sour cream. Bon appetit!
