The best meat is pork, the best fish is flax. This proverb aptly describes the attitude of Ukrainians to meat, and especially pork. It is impossible to imagine authentic Ukrainian cuisine without gourmet meat dishes. One of these original meat dishes is kruchenyky, or zavyvantsi.

The name of the dish is unpretentious and comes from the word “twist" (krutyty): to cook kruchenyky, the filling must be twisted into meat. By the way, both the filling and the meat can be different, it all depends on the region.


Here's what you'll need to make traditional kruchenyky:

  • pork — 500 grams;
  • prunes — 200 grams;
  • cheese — 200 grams;
  • salt, pepper — to taste.

The cooking process

The simplicity of Kruchenyky does not take away its taste and creativity.

  1. To begin with, cut pork into 1—1.5 centimeters thick steaks and make chops.
  2. Cut prunes into small pieces, grate cheese.
  3. Place the filling on a chop and wrap in rolls. To keep the shape, it can be tied with a thread or pinched with a toothpick.
  4. Put the pieces in a deep pan, fill with broth and send to the oven for 30—35 minutes.
  5. Kruchenyky taste good with sour cream and mashed potatoes.
