Halytsky, or Lviv cheesecake is a favorite dessert in many Ukrainian families. Its creator is considered to be the legendary cook Daria Tsvek. A girl from an intelligent family was taught from an early age the intricacies of setting the table and cooking delicious meals. This knowledge later formed the basis of her cookbooks, which are still popular among housewives.

In the bestseller "Sweet Cookies", Ms. Daria shared a recipe for Galician cheesecake.

Ingredients

  • greasy cheese — 500 grams;
  • butter — 150 grams;
  • sugar — 130 grams;
  • 3 eggs;
  • 1-2 boiled potatoes (can be replaced by 2 tablespoons of semolina);
  • lemon peel — 1-2 teaspoons;
  • baking powder — 1 teaspoon;
  • raisins or dried cherries — 50 grams.

For the glaze:

  • butter — 1 tablespoon;
  • cocoa — 2 tablespoons;
  • heavy sour cream — 2-3 tablespoons;
  • sugar — 2 tablespoons.

The cooking process

  1. Separate the yolks from the proteins. Using a mixer, beat the yolks together with the sugar to form a light viscous mass.
  2. Grate the cheese through a sieve. We advise you not to use a blender because you will not get the desired consistency.
  3. Boil the potatoes and grate them.
  4. In a separate bowl, mix the mashed two boiled potatoes, cheese, softened butter, baking powder and lemon zest. Pour the yolks into the mixture and mix thoroughly. Add raisins or dried cherries and mix again.
  5. Beat the egg whites with the salt. In order for them to form a stable foam, the proteins must be pre-cooled. If possible, the dishes and whisk should be pre-refrigerated for 10-15 minutes.
  6. Carefully mix the proteins into the cheese mixture.
  7. Grease a baking dish with butter or cover with parchment paper. Put the dough in a form and bake for 50-60 minutes at 160 ° C. The finished cheesecake should stand in the oven for a while, it can fall from a sharp drop in temperature.
  8. Prepare the glaze. In a small saucepan, mix all ingredients and heat over low heat. When the sugar has melted, remove the pan from the heat.
  9. Remove the cheesecake from the oven and let it cool a bit. Drizzle with icing.
  10. Taste Galician cheesecake with fragrant Carpathian tea.
